Mix sourdough starter and warm water in a large bowl, until combined.Add bread flour, salt, and 2 tbsps. olive oil; stir until dough forms.Knead on a lightly floured surface for 8-10 minutes until smooth and elastic.Place dough in an oiled bowl, cover, and ferment for 8-12 hours or overnight, until doubled.Roll dough into a rectangle about 12×10 inches. Mix garlic and herbs with a tablespoon of olive oil and brush over dough.
