Kevin Belton’s Cookin’ Louisiana
In Louisiana, we have sixty-four parishes, which are like counties in every other state. They were originally church units set up by the Spanish Provisional Governor of Louisiana. My mom’s passion for cooking prompted her to get behind the wheel of the car and visit parish after parish to seek out the best ingredients for the best flavors, the fresher the better. While the farm-to-table concept is currently very popular, it was always normal for us.
As a kid, I was able to see crops growing in the soil, chickens in a coop, pigs in the pen, and cows grazing in the fields. I wish all kids could have the same opportunity at some point. When we are young, we have a natural curiosity. Bring a child to the farmer’s market because not only can they see, smell, and touch freshly harvested goods, but they can ask the growers questions like: “How long does it take to grow?” “How do you know when it is ready to be picked?” “Why are there so many different colors and textures?”

I’ve been fortunate to crisscross Louisiana top to bottom and side to side many times over, from big cities to small, some not even on a map, just a name on a sign. Each parish is as different as is a crayon in the sixty-four-color box, all united to make Louisiana great but each one a special gem. Calcasieu Parish
Louisiana has countless festivals, and I hope to attend as many as I possibly can in this lifetime. One that I’ve always wanted to visit and see is in Lake Charles. It used to be called Contraband Days, but is now known as the Louisiana Pirate Festival. Story has it that one of Jean LaFitte’s hideouts was Contraband Bayou. It was called that because it became his favorite place to bury contraband silver and gold.

Evangeline Parish
I first met Mr. Ortego in 1992. At this point, I had been using his hot sauce for years. Something about this sauce was different from others, and I couldn’t put my finger on it. It wasn’t until years later that I found out what made his sauce special. During a sit down with Mr. Ortego, he told me he grew the peppers, picked them, graded them, and made the sauce himself. The other thing he said that was so important, was the fact that all the peppers grew in Louisiana soil in Evangeline Parish. Mr. Ortega started his sauce business in the small town of Ville Platte, located on the edge of the Cajun prairie. They say that good things come in small packages. Ortego Hot Sauce came in a small bottle, was made in a small town, by a man with a huge heart.

Iberia Parish
When I was young, I always knew the holidays were near when I would see sugar cane laying on the side of the road having fallen off the cane wagons. I can still taste the first piece of sugar cane my dad peeled and cut for me, telling me to chew on it to get the sugar out. Mom always had a stalk or two in the kitchen to use in different ways. I also remember trying to play hide and seek in a sugar cane field, which is harder than you could ever imagine. Corn grows in rows and you can walk through those rows, but sugar cane weaves itself with its neighboring rows, making it pretty much impossible to walk through or hide in.

Rapides Parish
On one particular day, we drove out to Alexandria in Rapides Parish, and decided to visit the Alexandria Zoological Park. We had a wonderful visit to the zoo, and something happened that I will never forget. Monica and Noah were a step or two ahead of me and Monica reached out for Noah’s hand, as moms often do.
And then Noah looked back and reached out for my hand. That very moment choked me up and I may have even shed a tear. From that time on, I knew that little boy was mine, and I love him as if he were my own. That by far was the best day Alexandria could offer us as a family.
